Muffins
Cheddar Muffins
2 Cups Flour
1/4 Cup White Sugar
1 Tbsp. Baking Powder
1/2 Tsp. Baking Soda
1 Cup Grated Cheddar Cheese
1/4 Cup Vegetable Oil
1 Cup Buttermilk
1 Egg
Sift dry ingredients together. Beat oil, buttermilk and eggs. Pour moist mixture into dry mixture and stir just until blended. Pour into muffin tins and bake at 425 degrees for 20 minutes.

Pineapple Muffins
2 Cups All Purpose Flour
3 Tsp. Baking Powder
1/2 Tsp. Salt
1 Large Egg
1/4 Cup Vegetable Oil
1/2 Cup White Sugar
1 Cup Milk
3/4 Cup Drained Crushed Pineapple
Combine the first 3 ingredients in a large bowl. In a medium bowl, beat egg lightly and mix in the rest of the moist mixture. Add moist mixture to dry mixture all at once and stir until batter is mixed but still lumpy. Fill muffin tins 3/4 full, bake 20-25 minutes at 400 degrees. You can substitute the pineapple with fruit of your choice. Makes 18 muffins.

Apple Cheddar Muffins
2 Cups All Purpose Flour
1-1/2 Tsp. Baking Powder
1/2 Tsp. Baking Soda
1 Tsp. Salt
3/4 Cup Coarsely Grated Cheddar Cheese
1/2 Cup Butter or Margarine
2/3 Cup White Sugar
2 Large Eggs
1 Cup Coarsely Grated Apple
Combine first 4 ingredients together in a large bowl then add cheddar and blend. Cream butter and sugar together with electric mixer. Add eggs one at a time and beat to blend. Add the grated apple to the moist mixture then add moist mixture to the dry mixture all at once and stir just until combined. Fill muffin tins 2/3 full then bake 20-25 minutes at 350 degrees. Makes 12 muffins.

Blueberry Muffins
1 Cup Flour
1 Tsp. Baking Powder
1/2 Tsp. Baking Soda
1/2 Tsp. Salt
1 Cup Blueberries
1 Large Egg
1/4 Cup Butter
3/4 Cup Brown Sugar
1 Cup Buttermilk
1 Cup Oatmeal
Mix first four ingredients together in a large bowl. Fold washed, drained berries into dry mixture. In a medium bowl, combine buttermilk and oatmeal and allow mixture to soak for 10 minutes. Beat egg lightly in a medium sized bowl. Melt butter and add butter and brown sugar to egg. Combine egg mixture with oatmeal and stir to blend. Add moist mixture to dry mixture all at once and stir lightly. Fill muffin tins 3/4 full then bake 20 minutes at 400 degrees. Makes 12 Muffins.
