MAIN AND SIDE DISHES



Side Dishes

Fried Rice

2 Cups Cooked Rice

1/2 Cup Sliced Mushrooms

1/4 Cup Diagonally Sliced Carrots

1/4 Cup Small Broccoli Florets

1/4 Cup Diced Red or Green Pepper

2 Diagonally Sliced Green Onions

2 Tbsp. Cooking Oil

1 Beaten Egg Cooked and Diced

4 Tbsp. Soy Sauce

1/4 Tsp. Ginger

1/2 Tsp. Garlic Powder

Salt and Pepper to Taste

In a large Non-stick frying pan heat the cooking oil and reduce heat to medium-low.  Saute mushrooms lightly then add remaining ingredients (except green onion).  Fry until carrots are slightly cooked but still firm then top with green onion and serve.  You can also turn this dish into a "meal in a pan" by adding cooked, diced beef, pork, ham, chicken, turkey or tofu.  Serves 4-6.

Easy Pasta Side Dish

2 Cups Cooked Pasta

1/2 Cup Sliced Mushrooms

2 Sliced Green Onions

1 Tbsp. Butter or Margarine

1/4 Cup Frozen Corn

1/4 Cup Parmessan Cheese

1/2 Tsp. Garlic Powder

1/2 Tsp. Basil

Salt and Pepper to Taste

Melt butter or margarine in large frying pan then saute mushrooms lightly.  Stir in remaining ingredients and mix well.  Let simmer for 5 minutes then serve.  Serves 4-6.  To change the taste a bit, try using cheddar cheese, swiss cheese or Monterey Jack cheese.

Baked Cheesy Potatoes

3 Cups Hot Mashed Potatoes

1/2 Cup Grated Cheddar Cheese (or cheese of your choice)

1/4 Cup Lightly Sauteed Onion

2 Tbsp. Butter or Margarine

1/2 Tsp. Garlic Powder

Salt and Pepper to Taste

After mashing potatoes add remaining ingredients and mix well.  Spoon into a greased casserole dish and smooth top.  Bake in 350 degree oven for 30 minutes or until the top is golden brown.  If you wish, you can sprinkle a bit of grated cheese on top at this point and bake for another few minutes to melt cheese.  Serves 4-6.

Yummy Roasted Potatoes

5 Medium Potatoes peeled and sliced into wedges

1 Tbsp. Cooking Oil

Seasoned Salt to Taste

1 Sliced Green Onion

1/4 Cup Parmessan Cheese (or cheese of your choice)

Put the cooking oil in a glass casserole dish and spread around.  Place potatoe wedges in oil and sprinkle with the seasoned salt.  Cover casserole dish with plastic wrap or glass cover and shake so the potatoe wedges are coated with oil and seasoned salt.  Microwave on "high" for 7 minutes.  Drain excess oil/liquid from casserole dish then sprinkle green onion and grated cheese on top of potatoe wedges.  Bake (uncovered) in a 375 degree oven for approximately 20 minutes or until potatoes are golden brown.  May be served with sour cream on the side if desired.  Serves 4-6.

More Side Dishes

Dumplings

1 Cup Flour

2 Tsp. Baking Powder

1/2 Tsp. Salt

1/2 Cup Milk

2 Tbsp. Cooking Oil

Mix together flour, baking powder and salt.  Combine milk and oil and add to the dry ingredients.  Stir just to moisten.  Drop from tablespoon directly onto boiling stock.  Cover tightly, return to boiling then reduce heat (don't lift cover) and simmer for 12-15 minutes.

Main Dishes

Barbecue Style Chicken or Ribs

Chicken Pieces or Ribs to Feed 4-6 People

1/2 Cup Ketchup

1/4 Cup Soy Sauce

1 Tbsp. Vinegar

1/8 Cup Corn Syrup

3 Minced Garlic Cloves

1/4 Tsp. Ginger

Seasoned Salt and Pepper to Taste

1/2 Tsp. Chili Powder

1/4 Cup Warm Water

Put all ingredients (except meat) in a large mixing bowl (one you have a lid for).  Mix well then add chicken pieces or ribs, cover bowl and shake to coat all the meat.  Let meat marinate for at least 2 hours.  Liberally spray a glass casserole dish with non-stick spray and place meat pieces at least 1" apart.  Bake in 375 degree oven for approximately 45 minutes.  You can also use the barbecue for this recipe but I suggest you put a piece of tin foil over the grill and spray it well with a non-stick coating (otherwise the meat tends to burn very quickly).   Serves 6-8.

Hamburger Chop Suey

1 Pound Hamburger

2 Chopped Onions

1 Cup Chopped Celery

1 Can Cream of Mushroom Soup

1 Can Cream of Chicken Soup

1-1/2 Cups Water

1/2 Cup Raw Rice

1-3 Tbsp. Soy Sauce

1-1/2 Cup Chowmein Noodles

Brown hamburger, add remaining ingredients except noodles.  Pour into casserole dish and bake for one hour at 350 degrees.  Add chowmein noodles on top of casserole and bake another 30 minutes.

Cabbage Rolls

12 Cabbage Leaves

1 Pound Ground Beef

1 Cup Rice

1/2 Cup Onion

1 Tsp. Parsley

1 Egg

1/2 Cup Milk

1 Tsp. Salt

2 Tbsp. Brown Sugar

1 Can Tomatoes

1/2 Cup Water

1 Bay Leaf

Cloves

Combine ground beef, rice, parsley, onion, egg, milk, salt and pepper.  Put a spoonful of mixture in each cabbage leaf.  Place in roaster, sprinkle with brown sugar, cover with tomatoes, water, bay leaf and cloves.  Bake at 350 degrees for 1-1/2 hours.

Fish or Chicken Batter (For Deep Frying)

1 Cup Flour

1 Tsp. Baking Powder

1/2 Tsp. Salt

1/2 Cup Milk

1/2 Cup Water

Mix all ingredients together.  Dip pieces of fish or chicken until completely coated and deep fry until golden brown.

Gertie's Chicken

3 Pounds Chicken Wings (legs or breasts work, too)

1/2 Cup Sugar

3 Tbsp. Cornstarch

1/2 Tsp. Salt

1/4 Tsp. Ground Ginger

1/4 Tsp. Garlic Powder

2/3 Cup Water

1/4 Tsp. Black Pepper

1/3 Cup Lemon Juice

1/4 Cup Soy Sauce

Mix sugar, cornstarch, salt, ginger, garlic powder and pepper.  Add liquid ingredients.  Cook over medium heat in a sauce pan, stirring constantly until mixture thickens..  Put chicken pices in an uncovered casserole dish and pour sauce over top.  Bake at 1-1/2 hours at 350 degrees.  Baste chicken pieces with sauce while baking so the chicken doesn't dry out.
